Summer Fettuccini Salad

Ingredients
- 1lb Cervasi Fettuccini
- 4 T. Cervasi Extra Virgin Olive Oil
- 1-14.5oz can Cervasi Quartered Artichoke Hearts
- 1-7-ounce jar sun-dried tomatoes in oil, reserve oil for dressing, drain and roughly chopped
- ¼ c. loosely packed fresh parsley, finely chopped
- Salt and pepper, to taste
- For the Dressing:
- 4 T. sun-dried tomato oil
- ¼ c. Cervasi Lemon Juice
- 1/8 t. garlic powder
- Salt and pepper, to taste
Instructions
- Cook Fettuccini until al dente
- Toss cooked pasta with olive oil, artichoke hearts and sun-dried tomatoes in large serving bowl. Ensure even coating of olive oil. Add parsley, then salt and pepper to taste.
